Pico De Gallo

Pico De Gallo is on the table with any Mexican meal, or as a snack with chips.  It is used as a topping for everything from eggs for breakfast to fajitas or rice and beans for dinner.  There are numerous variations of this recipe, but this is the "basic".  You can experiment by adding avocados or garlic.  The degree of "heat" can be adjusted by adding or deleting the amount of jalapeno peppers.

Ingredients

2 Medium tomatoes or 6 Roma tomatoes

1 Medium onion

1 bunch Cilantro

1 Jalapeno pepper

1 Lemon or Lime

 

Dice the tomatoes and onion.  Cut the leaves from the Cilantro and throw the stems away.  Chop the leaves.  Finely chop the Jalapeno pepper.  Mix all ingredients together.  Add approximately 2 teaspoons lemon or lime juice.  Salt to taste.

Serve with tortilla chips or use as a topping for tacos, quesadillas, enchiladas, rice and beans.
